I’m a local chef, pasta maker, and licensed enogastronomic guide—recognized by Forbes USAfor creating one of Bologna’s most sought-after food experiences.

I’ve worked in kitchens across Bologna and Modena, including a long-standing Michelin-starred restaurant in Savigno (Amerigo). I hold an advanced regional certification (Specializzata Tecnica Superiore) specializing in DOP and IGP products of Emilia-Romagna, and I am currently studying Gastronomy at the University of Bologna (est. 1088).

This is not a standard food tour!

It’s a small-group, carefully curated journey into the culinary identity of Bologna—designed for travelers who want to understand why Bologna is considered Italys food capital.

We begin beneath the of Palazzo della Mercanzia with a perfectly pulled macchiato and traditional torta in a historic family-run pasticceria, before stepping into the Quadrilatero—Bologna’s ancient market—where I guide you through the stories, origins, techniques, and cultural significance behind Italy’s most iconic products.

You’ll taste Parmigiano Reggiano DOP, Coppa Piacentina DOP, Prosciutto di Parma DOP, Mortadella di Bologna IGP, and a 25-year Aceto Balsamico Tradizionale di Modena DOP, while learning how to recognize true artisanal quality from mass production.

We continue inside one of the oldest taverns in Italy (est. 1465) where you’ll enjoy a curated tasting of regional salumi, cheeses, breads, and local Pignoletto wine.

The experience culminates with handmade tagliatelle al ragù, paired with Sangiovese di Romagna, at a beloved traditional trattoria—before ending on a sweet note with one of Bologna’s finest artisanal gelati

—Bologna in Depth: A Private Chef’s Enogastronomia Experience €145.50

This experience is fully private and deeply culinary-minded, designed exclusively for you and a small circle—whether that’s family members or close companions. There are no outside guests, no mixed groups—just an intimate evening shaped entirely around you.

We begin at a relaxed pace, settling into the rhythm of Bologna with a glass of Pignoletto DOC or Lambrusco Salamino, accompanied by a curated selection of regional salumi and cheeses. This includes Culatello di Zibello DOP, 24-month Prosciutto di Parma DOP, Coppa Piacentina DOP, Mortadella di Bologna IGP, Salame Bolognese, Squacquerone DOP, Pecorino Scoparola di Romagna, and a caramelized local fig confettura—served in one of Bologna’s most iconic settings.

From there, the experience unfolds into a tasting that defines the culinary identity of Emilia-Romagna: Parmigiano Reggiano DOP Vacche Bianca paired with Aceto Balsamico Tradizionale di Modena aged 25 years, alongside carefully selected local products—each chosen for its craftsmanship and story.

At the heart of the evening is a hands-on moment with fresh handmade pasta, where you’ll experience the tradition behind tortellini and tagliatelle al ragù, paired with a glass of Sangiovese di Romagna in one of my favorite trattorie.

We close on a sweet note with one of the city’s finest artisanal gelato, followed by an espresso and a final digestivo—either an amaro or a glass of Romagna Albana Passito DOCG.

Throughout the experience, I share not just flavors, but the culture, history, personal stories and techniques behind each element—offering a deeper understanding of what makes Bologna Italy’s true food capital.
